Ingredients
1lb beef brisket
OR flank steak / shank meat as alternative
8oz Korean radish
10-12oz bean sprouts
4-6oz bracken/fernbrake/gosari (mountain vegetable, Beef of the Mountains”)
OR more scallion/green onion if unavailable
2-4oz dreid taro stem — optional
1 small onion
3-4 large scallion OR 3-4 regular green onion bunches
6 garlic cloves
3 whole, 3 minced

2-4 tsp gochugaru (red pepper flakes)
2 tbsp soy sauce
1 tbsp dashidari (korean beef broth powder)
2 tbsp cooking oil (optional)
2 tbsp sesame oil
3-5 dried shiitake mushrooms
OR fresh shiitake / oyster mushroom

optional variations:

  • egg and starch noodles

Lets do it!

Meat

  • soak in cold water to rinse out some blood

then do main BOILING

  • in boiling water for ~1hour
    • 2-3 slices of ginger (optional)
    • dashima pieces (optional, and just until boils)
      • iphone surface amount
    • add beef (cut a few times along grain)
    • 4 dried shiitake mushrooms
    • radish cut into large quarters
    • 1 small onion in half
    • 3 whole garlic
    • Skim off scum on top of pot perdioically
    • BOIL UNTIL beef can be easily strung apart by hand

soak taro stem (optional, about 1hr)

then boil gosari (about 1hr)

  • boiled and soaked
  • bought dry is very thin
    • when fully soaked and expanded you can easily squish it

then make sauce

  • chili flakes
  • salt
  • soy sauce
  • sesame oil
  • olive oil
  • black pepper
  • green onion
  • anchovy (optional)
  • dashida (korwan beef stock powder, optional)
    cover and wait :)

then prepare rest of ingredients to mix with sauce

  • scallion/green onion cut in ~2 inch lengths
    • tenderize with back of knife along green onion before cutting
  • mung bean sprouts
  • softened & expanded gosari
  • cut korean radish into medium sized pieces

MIX prepared veggies very well with sauce
heat up / slightly cook (optional, advised if using anchovy)

THEN take out all things from beef stock (minus garlic)
make sure theres about 8 cups / 2 liters of broth, add more water or beef broth if not enough

THEN add all sauced up veggies to boiling stock
don’t forget to take a little bit of the broth water and put in sauce/veggie mix pan to get last bits of sauce :)
cook covered for ~20-30 minutes, or until tender

prepare what was taken out
slice mushrooms thinly
let beef cool
string apart beef
(save some for garnish if you want)

after veggies are cooked for 20-30 mins, add in beef, mushroom (onions optional)
Cook for 10 minutes
add salt periodically if needed

Prepare sliced green onion for garnish
Prepare sliced pepper for garnish

Have fun preparing dish!!!!
